Banana Upside-Down Skillet Cake

Recipe Backstory

This one’s probably my favorite from the Let’s Bake Cake ebook. Why? It’s so easy but feels so fancy.

My kids love banana pancakes, but pancakes can be more hands-on than we can manage some days. Sometimes it’s nice to pop something in the oven, set a timer, and do something else for a couple minutes. This recipe is perfect for that kind of day.

With just a few minutes on the stove, this is a great set-it-and-forget-it dish that makes any day feel like a special occasion.

Preheat & Start the Cake

Bananas may go into the pan first for this upside-down cake, but the cake ingredients come first in our prep. That’s because the bananas will cook very quickly, so you want to be ready to go as soon as they are.

Blend your oats, nuts, salt, baking powder, and baking soda in a blender or food processor to create a course flour.

Next add eggs. Whisk the eggs until well-beaten and uniform in consistency and color.

Add milk, honey, and vanilla and mix well.

Set your cake mix aside while you start on your banana topping.

Start the Topping

Heat olive oil and vanilla (optional) in your skillet or pan. Meanwhile, slice bananas into about 1/4-inch discs.

Lay bananas in your skillet or pan in a single layer. Sprinkle with cinnamon and cook for about 2 minutes or until they’ve begun to caramelize on the bottom.

Flip bananas, being sure to arrange them in a single layer again, and cook the other side for 2 minutes.

Construct Your Cake

Pour your cake batter over your cooked bananas. If you don’t have an oven-safe skillet, transfer your bananas to an oiled baking dish before covering with cake batter.

Smooth out the batter to fill the skillet evenly.

Bake

Bake at 400 for 20 minutes or until golden brown on top.

Ding! Let’s Eat!

Ingredients
  

Cake Ingredients:

  • 1/2 cup quick or old-fashioned oats
  • 1/4 cup almonds
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 eggs well-beaten
  • 3/4 cup milk
  • 1 tsp vanilla
  • 1 tsp honey

Topping Ingredients:

  • 2 tbsp olive oil
  • 2 bananas peeled and sliced
  • 1 tsp cinnamon
  • 1/2 tsp pure vanilla extract optional

Instructions
 

  • Preheat oven to 400°F (204°C).

Start by preparing your cake batter.

  • Grind oats and almonds in a blender or food processor until you’ve made a course flour.
  • Pour oat mixture into a large mixing bowl. Add salt, baking powder, and baking soda. Stir until combined.
  • Add eggs to mixing bowl. Using a fork or whisk, beat eggs until the yolks and whites are combined and even in color.
  • Add milk, vanilla, and honey to your mixing bowl. Mix all cake ingredients until combined and your batter is uniform in texture. Set aside.

Move on to preparing your toppings.

  • Heat olive oil in a cast iron skillet over medium heat.
  • While oil is heating, peel and slice bananas.
  • Add vanilla to skillet and mix with the heated oil. Spread oil and vanilla to cover the cooking surface of your skillet.
  • Add banana slices to skillet in a single layer, sprinkle cinnamon evenly over bananas, and cook until bananas begin to brown on the bottom. This will take about 2 minutes.
  • Flip bananas and cook the other side for another 2 minutes.
  • Turn off heat. Pour cake batter over bananas. Spread batter to form an even surface.
  • Bake cake in skillet at 400 degrees for 20 minutes or until golden brown on top.
