Roasted Chicken and Potatoes with Cranberry and Pomegranate

This is a hearty fall stew with seasonal ingredients, and it’s surprisingly easy – the oven does all the work! Cranberries and pomegranate seeds with an orange, soy, and balsamic sauce give a sweet and sour note to roasted chicken and potatoes. A salad and rolls are the perfect complement to this dish.

Prep the Oven & Chicken

Preheat oven to 450°F (232°C).

Trim chicken breasts and slice into 1.5-inch strips lengthwise. Arrange chicken strips at the bottom of your Dutch oven.

Mix Your Sauce

Start by adding balsamic vinegar, olive oil, water, orange juice, soy sauce, ground black pepper, crushed red pepper, ground cumin, oregano, and thyme to mixing bowl.

Fill Your Dutch Oven

Roast & Shred

Ingredients
  

  • 3 pounds boneless skinless chicken breast, trimmed and sliced into 1.5-inch strips

Sauce:

  • 1/4 cup balsamic vinegar
  • 1/4 cups olive oil
  • 1/4 cup water
  • 1 cup orange juice
  • 3 tbsp soy sauce
  • 1/2 tsp ground black pepper or to taste
  • 1 tsp crushed red pepper or to taste
  • 1 tbsp ground cumin
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 3 cups fresh cranberries
  • 1.5 cups pomegranate seeds about 1 full pomegranate
  • 1 onion minced (about 1.5 cups)

Add-ins:

  • 8 medium potatoes quartered
  • 12 cloves garlic whole

Instructions
 

  • Preheat oven to 450°F (232°C).

Prepare chicken:

  • Trim chicken and slice into 1/5-inch strips length-wise.
  • Arrange chicken at the bottom of a Dutch oven.

Prepare sauce:

  • Combine sauce ingredients in medium mixing bowl. Stir to combine.
  • Pour sauce over chicken.
  • Spread sauce to evenly cover chicken.
  • Arrange potatoes and garlic in single layer over chicken and sauce.

Roast:

  • Cover and roast at 450 for 45 minutes or until chicken is cooked through and potatoes are tender.
  • Remove from oven and uncover. Shred cooked chicken with two forks to desired size.
  • Return to oven and roast uncovered about 15-20 minutes or until potatoes are cooked through and chicken is beginning to brown.
