This sweet and crunchy salad is the perfect taco topping. Plus, it takes only minutes to make.

  • 2.5 cups cooked corn 1 16-ounce package frozen
  • 1 bell pepper diced about 1 cup
  • 1 green onion sliced
  • 2 cloves garlic minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp paprika
  • 2 tbsp orange juice
  • ½ tsp rice vinegar


  • Add corn, bell pepper, green onion, and garlic to a mixing bowl.
  • Add salt, pepper, and paprika to mixing bowl.
  • Pour orange juice and rice vinegar over ingredients in bowl. Mix well.
  • Serve alone as a side dish or as a topping for salad or tacos.
  • Refrigerate in airtight container for 1-2 days.
