I can think of very few things more refreshing than watermelon. This salsa is crunch, sweet, and spicy all at once. It’s a great option for a refreshing side dish or garnish for tacos or chips.

Chop your watermelon into bite-sized cubes (approximately 1/2-inch).

Slice green onion into 1/8-inch rings and chop cilantro and garlic into small pieces.

Add chopped ingredients to mixing bowl.

Season with dill weed, paprika, and salt to taste.

Toss ingredients in lemon juice and rice vinegar and stir until thoroughly mixed.
